Tante Marie School of Cookery was founded in 1954 by the acclaimed cookery writer Iris Syrett in Woking, Surrey. The school is named after Ann-Marie Taride the author of the 1925 French culinary bible, ‘La Veritable Cuisine de Famille’ – Tante Marie being her pseudonym.

In 1967 Tante Marie School of Cookery was building momentum and moved into Woodham House on the Outskirts of Woking. It remained there until January 2015 when Tante Marie Culinary Academy opened its doors in its current position in the center of Woking – continuing to provide top-class chef training and cookery classes to those passionate about food.

Our Facilities

Tante Marie Culinary Academy and Restaurant are just a 1 minute walk from Woking train station, just 20 minutes from central London. The Academy’s central, town centre location is within easy reach of London, Heathrow and Gatwick airport. The Tante Marie 4 Week Essential Skills course is one of the world’s leading cookery courses of this type. During the course students will learn a range of essential, culinary skills across several areas of cookery. Students will leave with the ability to cook good food, for all occasions and in any environment. What you will learn Your course will begin with an introduction to working in a professional kitchen environment, incorporating practical skill development such as knife skills, before moving on to the foundations of basic cookery. Lessons are designed to include recipes and techniques that will build your understanding of how food changes as you cook. This will enable you to make adjustments and correct mistakes as you go on to produce your own recipes and menus. Our flagship Cordon Bleu Diploma is for those who are serious about food and looking to take the first steps towards a career in food and drink. The Tante Marie Cordon Bleu Diploma is an internationally recognised qualification which has been setting the standards in global culinary training since its creation in 1954. Run over a full 3 term academic year from September to July, this course is designed for those with little or no previous experience in the kitchen, allowing students to progress within their comfort zone towards a professional culinary qualification. What you will learn On arrival to the Academy you will receive your Tante Marie Diploma recipe file. Each term will see you working through this array of versatile recipes, learning and developing cookery skills and techniques to the highest standards and building your confidence in the kitchen. Term one begins with the basics, introducing you to working in a professional kitchen, building your practical cookery skills, such as knife work and time management, allowing you to master the foundations of cookery. The Tante Marie Intensive Cordon Bleu Diploma is suited to experienced cooks who wish to improve their foundation skills and gain a professional qualification in cookery. Our Cordon Bleu Diploma is an internationally recognised qualification which has been setting the standards in global culinary training since its creation in 1954. This intensive two term course covers the same curriculum and awards the same qualification as our three term course, but is run at a faster pace for more mature students who have some previous cookery experience and are able to respond to the pressures of intensive learning. What you will learn The Intensive Cordon Bleu Diploma begins with the same basic introduction to working in a professional kitchen as the three term Diploma, but progresses at a much faster pace. Students on the intensive course are therefore expected to be able to tolerate a more pressurised learning environment and be focussed and committed from the beginning of the course. The 1 term Cordon Bleu Certificate course is suited to those who are looking to develop a career in food and hospitality. We have been running this course since 1954, which has led to its global recognition as one of the leading foundation level culinary training programmes. What you will learn Your course will begin with an introduction to working in a professional kitchen environment, incorporating practical skill development such as knife skills, before moving on to the foundations of professional cookery. Similar to our shorter 4 week courses, lessons are designed to include techniques that will build your understanding of how food changes as you cook. The Certificate course then takes you to the next level of ability, looking deeper in to various areas of cookery and adding supporting theory lessons – helping you to better understand the food that you cook, make adjustments and produce recipes of your own. This combination of practical cookery and theory classes will build a foundation level of understanding in all areas of cookery including menu planning, budgeting and presentation skills. You will be taught in a small group of no more than 10 students, with a heavy emphasis on time spent in our state of the art kitchens. Tante Marie Culinary Academy is pleased to announce that we are now providing the Assessment in Marine Cookery – the Ship’s Cook Assessment – a vital step in achieving the compulsory Ship’s Cook Certificate of Competency. This course is ideally suited to experienced chefs who are already working on-board a vessel and need to update their certification, or to chefs who have solid industry experience and are looking to begin a career at sea. The Tante Marie Culinary Academy is based in central Woking, just a 20 minute train ride from London, Waterloo. Our state-of-the-art facilities combined with our online ‘Virtual Learning Environment’ (VLE) means our Academy is the ideal place to gain the accreditation you and your crew need, as quickly and simply as possible, to ensure compliance with MLC 2006. Course Summary For new and existing chefs looking to gain the compulsory, Ship’s Cook Certificate of Competency. This assessment is run over 4 to 5 days and offers flexibility to those with Accredited Prior Learning. What is the Assessment in Marine Cookery? The Ship’s Cook Certificate is a mandatory requirement for all chefs on UK-registered commercial vessels operating more than 60 miles offshore and with 10 or more seafarers on board. This qualification replaces the previous Merchant Shipping (Certificate of Ship’s Cooks) Regulations 1981.
