Basque Culinary Center

Introduction

The Basque Culinary Center is a pioneering academic institution worldwide, created by seven of the top Basque chefs along with Mondragon University, and with the involvement of eleven of the most influential chefs in the world.

At the Basque Culinary Center, our main aim is higher education, research, innovation and promotion of gastronomy and nutrition.

Since its creation, in September 2011, we have worked to become the international benchmark in this field and also to promote gastronomy as a lever of social-economic development through the Faculty of Gastronomic Sciences and the Centre for Research and Innovation. We also develop many different promotional activities.

CAMPUS

The BCC contains a Faculty of Gastronomic Sciences located in Donostia-San Sebastián attached to Mondragon University and a Centre for Research and Innovation in Food and Gastronomy, which is a unique project in Europe.

It is a living Faculty where food enthusiasts and catering professional live side-by-side, where events, series of conferences and seminars and cultural events are organized.

In a unique building that has won several awards, equipped with the best facilities so that students can learn in the most effective and practical way possible.

A building that blends in with its surroundings. It projects an emphatic, innovative, suggestive and bold image. 15,000 square meters built in the middle of a campus surrounded by the landscape.

The Basque Culinary Center is located on a hillside in an area in the south of San Sebastián known as Miramón, within the Technology Park of the same name.

INTERNATIONAL COUNCIL

The most influential chefs in the world most important gastronomical countries constitute the International Council, and its work is to advise the Basque Culinary Center on strategic tasks.

Active members and founding members make up the International Council, who are the directors that are renewed after a period.

Chaired by Joan Roca, they are members of the Council Ferran AdriÃ, Gaston Acurio, Massimo Bottura, Michel Bras, René Redzepi, Heston Blumenthal, Alex Atala, Dan Barber, Enrique Olvera, Yukio Hattori, Dominique Crenn, Yohishiro Narisawa and Maria Fernanda Di Giacobbe.

Course in Expert bartender and modern cocktail preparation

This university degree course is a complete programme to become a modern barman. An intensive programme with a duration of 2 months, which includes study visits, master classes by prominent bartenders, a final project supported by tutors and work experience in the industry. A study plan that will provide you with a global vision that will enable you to master all the technical aspects of cocktail preparation and understand the business as well as the cocktail bar customer. During five weeks of intensive training, students, guided by tutors of the Basque Culinary Centre will perfect their culinary techniques; a journey through all the handling and conservation techniques, cooking process, patisserie and introduction to avant-guard trends, all of which will enable you to consolidate your knowledge and acquire new skills in dish preparation and presentation.
