Diploma in Professional Patisserie

Patisserie is a culinary skill that requires a course that stands alone. It is a skill and technique based course and is designed to give you the platform required by the modern pastry chef.

The Diploma is intensive and at a professional level which supports all the techniques you will require to succeed. There is a current demand for the pastry chef with the catering world looking for us to train in the high standards required and set by professional cookery schools. The course is designed for a wide range of individuals, from those looking to launch a career, wishing to set up their own business, career changers and those wishing to complement their current levels. Includes your uniform, personal knife kit and all recipes.

Our Patisserie Course is a new innovative course and is the first course in Scotland to specialise in the discipline of Patisserie.

Our Patisserie course is open to students of all ages and abilities. Anyone is welcome to apply, from aspiring chefs to those who simply have a passion for pastry, there is a real demand in the culinary world for skilled students in this area.

Students that complete the Course can use their qualification as a ticket to travel the world. There is a high demand in the catering industry for professionally trained pastry chefs or it can be used as a life skill, the course will give students tips and techniques that will remain with them throughout the years.

The Course equips students with a broad range of core skills, achieved through 90% dedicated hands-on experience enhanced through demonstrations by our professionally trained tutors.

CV Building Workshop

As part of the Intensive Certificate Course, we also offer an invaluable interview & CV building workshop.
Mentored by experienced business experts, this is an excellent opportunity to perfect your CV and hone your interview technique in preparation for either a change in career or to delve into the world of work.

Health & Safety

Before working in any foodservice environment, it is a legal requirement that every employee has a REHIS food hygiene certificate. As a matter of course, all of our Foundation Diploma students spend a full day of training with our Health & Safety officer, at the end of which a short exam is taken to gain certification.

Chef’s Essential Kit

Knives and whites are an essential part of any chef’s kit, given that it is virtually impossible to work without them. Therefore, we equip all students with a full set of knives and equipment, as well as two sets of chef’s whites. This is included in the Intensive Certificate Course price.

Qualifications & Accreditation

Edinburgh School of Food & Wine is fully accredited by ICAS and is continuously assessed and reviewed to ensure that we are reaching the standards that they set.
Only upon successful completion of our Diploma course, will each student receive:

  • Diploma in Patisserie
  • REHIS Elementary Food Hygiene Certificate
