Introduction
Learn professional chef and hospitality services for restaurants and other commercial food establishments. The Culinary Arts curriculum is designed to give you a professional and practical experience and background with a hands-on approach to the daily operation in a professional kitchen and full-service restaurant. Learn classical skills and knowledge needed to work in volume feeding establishments and experience all phases (front and back of the house) of a restaurant operation through rotation of assignments.
This program prepares individuals to provide professional chefs and related hospitality services in restaurants and other commercial food establishments. This includes instruction in recipe and menu planning, preparing and cooking foods, supervising and training kitchen assistance, the management of food supplies and kitchen resources, including cost and inventory controls, aesthetics of food preparation and presentation, as well as training in a wide variety of cuisines and culinary techniques.

Riverside Community College District Scholarship
There are over 250 scholarships available to students through the RCCD Foundation, and only one application is needed to apply. If you are an admitted student at RCC and have a student email address, you can apply for scholarships offered by the RCCD Foundation.
CGACC-RCC International Student Scholarship
International Students at Riverside City College are welcome to apply for CGACC-RCC Scholarship. This scholarship is in the form of a tuition fee reduction estimated at $1,250. The application deadline for CGACC-RCC International Student Scholarship is July 25, and the results of the students selected are typically announced by August 6.
To be eligible for this award, the applicant must be a new or continuing international student who will study full-time at one of the RCCD colleges (Riverside City College, Norco College, or Moreno Valley College) on an F-1 Student Visa in the fall semester. Transfer students can also apply. New international students who apply for the scholarship must have a completed RCC international student application, submit all required documents, and receive an RCCD I-20.

Associate of Science Degree
The Associate of Science Degree in Culinary Arts will be awarded upon completion of the degree requirements, including general education and other graduation requirements as described in the college catalog.

Program Outcome
Upon successful completion of this program, students should be able to:
- Demonstrate learned customer service, wait for staffing, and point of sale system knowledge in a working dining room setting.
- Employ proper safety and sanitation principles in the receiving, storage, preparation, and food service.
- Formulate menus utilizing menu design techniques, conversion of written recipes, and calculations of food costing and menu pricing.
- Demonstrate practical and theoretical knowledge of classical and contemporary cooking methods for hot food and baking/pastry arts.
- Demonstrate practical knowledge of classical knife cuts. Apply learned cooking methods to international cuisines.
- Demonstrate proficiency in piping skills, mold usage, plate presentation, and other artistic techniques used in the garde manger kitchen and hot food, cold food, and pastry presentation.
