School Description

Gastronomy offers a wide array of professions, and all students who want to direct their studies towards the culinary arts, or want to build on their existing knowledge alongside exceptional mentors with a wealth of work experience and theoretical knowledge are welcome at Kul IN.

Kul IN intends to give students a wide array of culinary knowledge, the food industry, and gastronomy. To ensure that our students have perfected all the necessary skills for working in a quality restaurant, we begin by covering important foundations that all students, regardless of their educational background, need to pass.

As part of this program, students learn about thermal and mechanical food processing, recognizing quality ingredients, coupling seasonings with ingredients, creating quality restaurant menus, arranging and serving dishes, professional cooking standards, food storage, food portions, and the history of gastronomy.

Vision

Kul IN’s goal is to develop an educational center with a focus on creativity, research, and the promotion of modern cuisine and culinary technologies. Through the education of professional cooks, confectioners, and professionals in other branches of gastronomy. We are building an Institute which is a unique place for chefs, restaurant owners, managers, and culinary media to train and refresh their knowledge, and to learn about what is new in the world of food, drinksand desserts.

In order to offer our students a complete experience when studying Italian gastronomy and cuisine, we’ve created joint programs with the world renowned culinary school ALMA, La Scuola Internazionale di Cucina Italiana.

Culinary Institute Kul IN and ALMA La Scuola Internazionale di Cucina Italiana have successfully developed two joint programs: “Professional Cook of Italian Cuisine” and “Professional Pastry Chef of Italian Desserts.” Through intensive and dynamic studies, which take place partly in Sisak and partly in Colorno, Italy, students have the opportunity to gain invaluable international experience and become truly immersed in the culture that has shaped this world famous cuisine. In addition to hours of hands-on training, field trips, and practicums, students will also be assigned a several-month long internship where they will gain experience working in elite restaurants and pastry shops. Networking opportunities are endless and open doors to potential jobs as students prove themselves as capable cooks in the real world of high-end gastronomy.

Course: Culinary Arts During this two-month program, participants will receive a broad and intense education in professional cooking and pastry making. The dynamic course schedule is designed for people wishing to improve their culinary skills or who are directing themselves towards a career in professional gastronomy. The program takes a hands-on approach to cooking technique, with daily cooking labs supplementing lessons, as well as several field trips to local food production centers and guest lectures from visiting Croatian and international chefs. Students will be provided with the basic knowledge required to begin working in a culinary profession. Students will learn about thermal and mechanical food processing, identifying ingredient quality, coupling seasonings, knife work, creating quality restaurant menus, arranging and serving dishes, professional cooking standards, food portions, food preservation, and the history of gastronomy. Along with the professional skills that students learn during this program, they will also have the opportunity to meet successful chefs working in contemporary gastronomy and form a network with professionals in the industry. Culinary Practicums Because we believe that cooking is best learned through hands-on experience, our curriculum is designed such that 80% of class time is dedicated to practicums. The practicums begin with the basics, so that students have the opportunity to build their knowledge on strong foundations. Field Trips During the program, students will visit several local food production centers and small-scale local farms. The field trips help students better understand the production chain of the food industry, as well as preparation and storage techniques of various types of food, including cheeses, baked goods, meat products, wine, and coffee. Students are introduced to various brands of local produce from which they can learn to distinguish quality products and create contacts with local producers. This  9-month program  aims to produce fully trained professional cooks who are specialized in the art of Italian cuisine. The unique curriculum gives students the opportunity to practice their newly acquired skills, which they’ve gained through intensive courses at Kul IN and ALMA, by interning at elite Italian restaurants and hotels. Interning abroad gives students the invaluable opportunity to network internationally and connect with some of the most successful chefs in Italy and the world. PROGRAM DETAILS FOR PROFESSIONAL COOK OF ITALIAN CUISINE As a student of Italian Cuisine, you will be completely submerged in Italian culture, learning to speak and understand the language, while perfecting your skills in Italian traditional gastronomy. You will study under the leadership of some of the best Italian chefs in a fast-paced and dynamic international setting.  You will learn about: pastas, wines, regional dishes, history of Italian gastronomy, traditional products and lots of more. 1. Training in Sisak  The intensive program begins in Sisak, Croatia, at the Culinary Institute Kul IN. Kul IN is a new school, completely supplied with new cookware and the newest culinary technologies. The lesson plans and programs have been created by our dean Zdravko Peric, a professional chef with truly global experience in the culinary industry. Students will spend 9 weeks in Sisak learning Italian culinary techniques, kitchen management, Italian culture, Italian culinary terminology, and its language. The school’s ALMA Method of training will add a new dimension to your skill development in the kitchen. The program provides a dynamic international environment where students from all over the world study together (in English) and succeed in developing their culinary techniques.  With professionally equipped classrooms and industrially equipped kitchens located in Palazzo Ducale, ALMA and its professor-chefs will intrigue you with their knowledge and train you to become truly competent in the culinary industry. You will learn all the secrets of Italy’s 20 culinary regions, while training under the microscopes of skilled Italian chefs. During these five months, students will be putting to practice all the skills that they had learned in Kul IN and ALMA, and will gain real experience in the culinary world. ALMA carefully chooses the internship destination, based on individual students’ personalities, interests, strengths and weaknesses, and very importantly, the students’ own expectations. Throughout the internship, students still have the full support of ALMA, and can always ask the school’s staff for help and advice. The host restaurant will provide the student with room and board for the entirety of the internship. Training in Sisak  This intensive program begins with 8 weeks of basic training in Sisak, where we will cover the foundations of pastry making as well as advanced confectionery techniques.
