Leonardo da Vinci schools offer culinary art and wine tasting courses, to experience the Italian food and wine traditions and to learn cooking Italian dishes, no matter if you are a professional or an amateur.

Wine course

The wine course is an extraordinary opportunity to discover, enjoy and learn about all of the different aspects and subtleties of Italian wine and food.

The programme consists of 2 parts. The theory part will introduce students to the art of cultivating vines, methods and preservation of the best wines.

On the other hand, the practical part consists of tastings to get to know and to recognize wines from different Italian regions: 24 quality wines will be presented and tasted!!!

During the course there will also be the opportunity to visit a renowned winebar.

For a better understanding, tables, maps and other visual support materials will be used. Topics such as how to match wine and food together, and comparing Italian wines to foreign wines, will be dealt with.

The topics dealt with by the course are:

  • how to read the label of a bottle of Italian wine;
  • the classification of Italian wines (house wine or origin label, D.O.C and D.O.C.G.);
  • the traditional techniques of cultivation, fermentation and ageing used in Italy;
  • wine tasting and terminology
  • wine production in Italy and its consumption;
  • new developments and non-traditional wines;
  • Tuscan production, the North-West (Piemonte), the North-East (Friuli, South-Tirol, and other regions, particularly in the centre and in the South).

Leonardo da Vinci school in Florence organizes professional courses for foreigners on Italian cuisine.

We offer 3 level courses and the possibility to take Professional level I to Professional level III.

PROFESSIONAL COOKING COURSE - LEVEL I

Starting dates: every two weeks

Duration course: 44 weeks - 10 meetings, 40 one-hour lesson - i.e.: 8 meetings (32 lessons) of cooking course and 2 meetings (8 lessons) for 2 exams.

Professional Cooking Courses in Rome

The Italian Chef Academy organizes professional training and specialization courses in the food and wine sector. It is a training center recognized by the National Board of Vocational Education (accredited by the MIUR - Ministry of Education, University and Research).

The Italian Chef Academy is one of the leading academies in the industry, and functions through basic training as well as specialization in the culinary sector. Classes, held under the guidance under senior professionals, are held in the kitchens and laboratories which are located in the headquarters of the Academy.

The collaboration between Scuola Leonardo da Vinci in Rome and the Italian Chef Academy has allowed for the development of a series of educational courses that provide mentoring for professional training and language training. The common goal of these courses is to make sure that the development of technical skills is accompanied by a parallel growth of language and communication skills.

With regard to professional training, all courses include a series of theoretical and practical lessons in the kitchen, followed (with the exception of Module 1 of the Professional Pastry Course) by an apprenticeship in one of the many external facilities that are in collaboration with the Italian Chef Academy.

As for language training, we aim to ensure that those who have completed the training be able to approach the apprenticeship with all of the communication tools needed to interact in a real life work environment; in the long term, we want to provide students with the opportunity to be able to enter the work force without the obstacle of lacking knowledge of the language.
